Shop online and pick up for free to save time and socially distance: bit.ly/37w5CLo #StanwichChallenge HOLIDAY SANDWICH RECIPE ☀︎ Roast Cabbage 1 whole green cabbage 1 tbsp extra virgin olive oil (EVOO) 1 tsp salt 1 tsp freshly ground black pepper Preheat oven to 375°. Half the cabbage, then cut it in 1/2” slices. Place them evenly onto a baking sheet. Drizzle the oil over the slices, and sprinkle salt and pepper over them. Roast for 45 minutes, until tender and golden. ☀︎ Roasted Butternut Squash 1 butternut squash, peeled, deseeded, and sliced thinly 1 tbsp EVOO 1 tsp salt 1 tsp dried sage 1 tsp dried oregano 1/2 tsp dried thyme 2 tsp Simple Truth fresh rosemary, minced Toss the squash with EVOO Then add the salt and herbs and toss again. Spread evenly onto a baking sheet, and roast at 375° 30-40 minutes, until tender. ☀︎ Sautéed Mushrooms 1 tbsp EVOO 2 cloves garlic, minced 1 large box Simple Truth cremini or baby bella mushrooms, sliced 1/2 tsp salt 1/2 tsp dried thyme 1/2 tsp dried oregano 1 tbsp balsamic vinegar Warm the EVOO in a skillet on medium heat. Add the garlic, and cook until slightly golden. Careful not to burn. Add the mushrooms and salt. Cook for 10 minutes, or until the mushrooms have significantly reduced in size and released their water. Add the thyme and oregano, and continue to cook on medium or medium-low heat. When the mushrooms are tender, and the liquid has cooked off––about 10 more minutes–– remove from heat. Add the vinegar to deglaze the pan. Season to taste with more salt if needed. ☀︎ Rosemary Fried Lentils (these are best fresh, do half batch if you don’t expect to eat them at once. If you have extra, reheat them in the air fryer or the oven to crisp again) 2 cups cooked lentils (avoid red lentils) 2 tsp EVOO 1 tbsp nutritional yeast 1 tsp Simple Truth fresh rosemary, minced 1 tsp smoked paprika 1/2 tsp salt 1/2 tsp pepper Toss the lentil with the EVOO, then add the remaining ingredients. Pour into your air fryer (or spread evenly onto a baking sheet). Air fry at 375° for 10 minutes, or bake at 375° for 30 minutes. ☀︎ Cranberry Orange Relish 2 cups fresh cranberries 1 fresh orange, peeled & chopped 1/4 cup sugar Place the cranberries, orange, and sugar in a food processor, and pulse to blend. The relish should be spreadable, and ingredients well blended, but not too smooth. ☀︎ To assemble the sandwich: On your favorite sandwich bread, layer the cranberry relish, cabbage, mushrooms, butternut squash, and friend lentils.
